Simon Gault adores great food. He also adores flying, and these two passions are not generally compatible. In order to retain his pilot's licence, Simon took on a personal nutritionist, Noelle Knottenbelt, to work with him to improve his weight and blood pressure. The two of them found a common bond in wishing to create delicious yet healthy food - and this book was born. It contains more than 50 recipes in Simon's signature style, containing the best of fresh ingredients, with comments on the nutritional value of each dish from Noelle. ABOUT THE AUTHORS: Simon Gault is one of Auckland's best-known chefs. He is currently head chef at Gault@George in Parnell, was the owner-chef of Gault's on Quay and has also worked at Euro on Princes Wharf and privately for Larry Ellison. He has a very high media profile. This is his first book. Noelle Knottenbelt is a registered nutritionist who works with private clients to improve their lifestyles and general health and fitness. She has always had an interest in cuisine and once spent a year in Paris attending Cordon Bleu School.
